Holiday Retirement: How long have you been a chef? How many of those years have been at Holiday?
Chef Jorge: I’ve been a chef for about 24 years, and eight and a half of them have been at Holiday.
HR: When did you know you wanted to pursue culinary arts as a career?
Chef Jorge: Well, I knew when I was 12 or 13 that I really loved to bake. I got my first job when I was 14 working for a catering company. I washed dishes and did little side jobs, whatever they needed done. From there, I went to culinary school at the age of 20 and have been cooking ever since.
HR: Wow! You were baking things at age 12?
Chef Jorge: Yeah, the first thing I ever made was a cream puff. I saw it on TV and tried to duplicate it from a recipe book.
HR: What’s your favorite part about your role at Holiday?
Chef Jorge: Interacting with the residents. I really like talking to them and cooking for them.
HR: What’s your favorite Holiday memory?
Chef Jorge: It was about two years ago. Residents were renewing their vows after 50 years of marriage. They got married in Hawaii originally and wanted a Hawaii theme here. We set up tiki torches outside by the pool because the bride really wanted fire. We were ready to have the whole thing outside.
Unfortunately, that day it was rainy and windy so we had to bring it all into the activity room. We had to turn around the room really quickly to make it look like a Hawaiian luau.
I ran out and bought some flame lights (those pieces of fabric with fan and lights to make them look like fire) and set them up as tiki torches. We brought the whole thing inside to make it magical for them. The bride cried because she was so touched.
